Trahaearn Time ☺
Today I got to look after my little baby brother for ages . We got to cook some Brownies together A.K.A I held him and did the cooking and he just got to eat chocolate chips that I gave him to munch on☺.
So here is the recipe from "Elena's pantry"
Espresso Fudge Brownies - we changed things to suit us
1 cup dark chocolate chips
¼ cup coconut oil
1 ½ teaspoons instant coffee
4 eggs
1 cup coconut palm sugar
1 tablespoon vanilla extract
¼ teaspoon salt
½ cup blanched almond flour
2 tablespoons coconut flour
Melt chocolate in a saucepan over very low heat
Add coconut oil and stir until completely dissolved
Stir in coffee and remove from heat
Blend in eggs, palm sugar, vanilla and salt to mixture in pan using a handheld mixer
Blend in almond flour and coconut flour
Pour into a greased 8x8 inch Pyrex baking dish
Bake at 350° for 25-30 minutes
Remove from oven and cool for 1 hour
Serve
They are sugar free, gluten free. Except the chocolate chips which have sugar in them. I suppose you could get sugar free chocolate chips if you wanted to though. They where very nice and moist and yummy.
